 As of now work is fine but with the economic situation what effect would unemployment/EI have on a sponsorship case?

if you apply under spousal case then no employment will not affect ur application

Yes, when you are sponsoring spouse and children only, you are exempt from income requirements.  If you are sponsoring anybody else, you need to show enough income to support your family in addition to the sponsored person.  If you do not have income but your spouse does, your spouse can co-sign the sponsorship agreement.
