can anyone advice :

If my documents are already attested from a Notary in India, would this be sufficient for the Immigration authorities in London? Can documents originating from Abu Dhabi(UAE) be also notarized from India (for example an employment contract, copies of bank statements etc?)

Its  much cheaper and less complicated to get documents attested as true copy in India than in many other places.

Yes, Documents originating from UAE can be notarized in India.

I have done the same thing. I got my documents (from UAE) notarized in India  @  Rs.25/- per page.
