After 4 years i recently received the letter stating I'm eligible to sponsor my parents. My parents are now supposed to file their PR application abroad.

My question is, will they check my income again? If yes, at which stage?

I make more than when i filed but i did get married and have a baby on the way so the family size has increased.

From what i understand my parents will be processed in Abu Dhabi and i think i don't really have to provide any more documentation to them.

Sponsors who are required to meet a LICO must meet it throughout the entire process.  Yes, they will be checking your income through the process, and you are required to inform them of any changes to your family make-up.
