How should I demonstrate my past experience?  Will I be required to demonstrate past pay stubs, should I get letters from past employers?

Dear,

Notarized copies of whatever you can show, Appointment/Offer/contract letters, pay-slips etc.

also, Original Reference-Letters (on letter-heads) from past & current employers

My problem is that I don't have the pay-slips from former employers, I have the tendency to discard them after tax season, I know bad idea, my husband keeps reminding me of that  Roll Eyes Roll Eyes Embarrassed Embarrassed 
I do have the pay-slips from my current employer and I can get letters from my former employers demonstrating that I worked for them, my responsibilities, dates of employment and their contact information.  Is anything else required?
Oh, and one of these places closed last year due to the recession, what should I do in that case.
