Can I sponsor my GF to come to Canada

 My girlfriend was refused tourist visa so wondering what other options we have to be together in Canada.
We have no intention to get married at this time as we have only known each other 2 months but defiantly are getting on great!
Want to spend more time to see if marriage is something we both want but don't want to be so far apart!

You can only sponsor her if you are married or common law (i.e. have lived together for a minimum of one full year). So the answer is no - you can't sponsor her at this time.

Other avenues to try could be skilled immigration (this takes time and you have to qualify), temporary work permit (she'll need a job offer), student visa (costs a lot of money to attend school as a foreign student and they won't approve her if they think she has plans to remain in Canada long term).

We are both very depressed as tomorrow is our last day together before I must leave.
Does this mean the only way we can be together is me leaving Canada to stay with her one year? Does the 2 months we've been together now count if I come back in 6 months and stay 10 months making it a year together?

Why dont you go and live with her instead of going through the trouble of sponsoring here. Besides if things don't work between you two and she decided to stay here illegally that would be a problem. If she gets accidently pregnant that would be double the problem which means she is here illegally with a baby who is Canadian. So to make life less complicated for you just go to her and see if things work out, you have the luxury of having a Canadian passport, make use of it. If things work out get married in her country and then file official sponsorship papers once you are back in Canada

No - the two months will not count after such a long break.
