I got the birth Certificate and ration card translated to english (Notary done too) but do I also need to include a copy of the punjabi ones too or are the Notary ones fine to summit?

No. You need to send both. This is from the region-specific guide for India:
"If your documents are not in English or French, send a notarized (certified) translation
with a copy of the originals."
