I only have one...do I get it back? Do I send my original, make a copy or have to go get a notarized copy or something?

Do I get any of the stuff in my application back for that matter? Marriage cert. (I have 2, so not a big deal), birth cert., photos?

Send COPIES of the birth certificate and marriage certificate.  Read the instructions.  You do NOT have to send originals unless they ask for them.

You don't have to tell me to "read the instructions", Sorry, but it's slightly annoying to see someone say that since all I have done for the past few months is READ instructions. I do a lot of double checking and second guessing myself because this is very important to me. I'm just not sure what kind of copy I need of my birth certificate...just a photocopy, if it needs to be notarized or if I need to actually go get another copy of a birth certificate.

Copy means photocopy.  If they need a notarized one or the original document they will clearly state it in the country specific instruction.  For example for my husband, he is from the Philippines so they require him to submit a copy of his birth certificate issued by the National Statistics Office from Manila.

As lovely20 mentioned,they would specify if they need notarized copy. I was recently (3 weeks ago) asked to send marriage certificate of my parents and death certificate of my father (this is a parent sponsorship case) and it has mentioned clearly to send  notarized copy of......

I have sent birth certificate in the past apply for my immigration, sponsoring my wife and now sponsoring my mom and sister. I only sent photocopies.

not necessarily true, I sent a birth certificate I received from the Registrars office in Barbados and they are now requesting a birth certificate with a signature dated closure to the date my son was born in 1987 the one I had previously  sent was the original certified by the registry with the government stamp and seal but a photocopy of your original one should suffice.

My case may be different since I am sponsoring my son they want to prove that I am truly his father
