For demonstrating your POF - any & every Financial Institution's docs would be acceptable... even Muhammad Yunus's GRAMEEN!

Unless and until they say that they dont accept POF from specific banks...any registered/recogonised, private/nationalised, should be fine.

This has nothing to do with Canadian Immigration, but in India...recently about 2000 indian banks were blacklisted for student visa...

I think banks has to be Government accredited
Grameen is a good example.
