hi.. i just wanna share my opinion, but it's still up to you. since you have study experience in canada, i would suggest CEC. this is your 1st work permit renewal right? so, you still have time. here are my options for you:
1. you can include your graphic design position (although your'e not sure because of the salary), let's say a gamble. but i just read the application guide, and i didn't see anything about salary. all that matters, you are a graduate from a canadian institution and have 1 yr skilled work experience. regarding the letter of reference, you can just write an explanation why you couldn't include that letter and just give all the details of your work as a graphic designer. you can also include your animator position since it is also in skill leve B. but since it is just part time, im not sure how often did you work.. the bad side of this, it will be more complicated, to compute the total required work experience. so this option is just like losing side in a gamble... OR, you can consider the next option.
2. you can wait for another 7 months then apply for CEC. you have your renewed work permit anyway right? so you would be able to complete 12 months of full time work experience as a graphic designer. in this case, your work experience will be solid, continious and easy for you to count 12 months!
3. you can do sponsorship if you think option 2 is not possible..

as long as you live-in together for over a year. and he's willing to make an agreement that if unpleasant happens to you (financially), he will support you.
