Do visa offices send AOR for documents mailed to them?   Lets say I mail them an updated PCC,  do they acknowledge receipt of it?

I doubt they would. I know that CIC, NS doesnt do that. I would believe that the Visa Offices follow the same rules.

there is no receipt or nothing. you just receive AOR once after sending full docs. but you can email them and ask if they have received your additional documents.

Thanks,  so we should have proof of delivery then,  just in case they say they didnt receive it.

Yep. You get to know who signed it. So you have a name to tag too.
