I have a bunch of airline tickets that I want to submit as proof of relationship. Do we need to send the originals or will copies suffice?

Copies are fine. If the visa officer wants to see the originals, they will probably ask for them; and you should bring the originals with you to any interview, just in case the VO asks for them.

Scan them and print them, placing multiple ticket images on a single page is fine.
