So here's the situation:
At the time I launched my application for FSW, I was totally single. Now, since London offices takes forever to so anything, I am receiving the medical forms, and I am not single anymore..I have been living with my girlfriend for over 10 months now.
Is there any better (faster) ways than waiting for myself to get the PR and then sponsoring her ?

I mean is it perhaps possible to add her as a co-applicant to my application since the processing hasn't finished yet?
And do you guys recommend it?

For Common law partner as per CIC you and her should be  continuously having it for a period of at least one year. You will have to show proof such as you share the same home/ support each other financially and emotionally etc.
You can file her application and the fee after that 12 months period and no longer have to wait till the completion of your application. It is much more faster in this way. http://www.cic.gc.ca/english/pdf/kits/forms/IMM5285E.PDF

You can add your girl friend if she is your spouse or Common law partner , as explained below:

Spouse
    Refers to either of the two persons (opposite or same sex) in a legally-recognized marriage.

A common-law partner
    Refers to a person who is living in a conjugal relationship with another person (opposite or same sex), and has done so continuously for a period of at least one year. A conjugal relationship exists when there is a significant degree of commitment between two people.

    Common-law partners must attach any documents that show they are in a committed and genuine relationship, for example, evidence that they share the same home, that they support each other financially and emotionally, that they have had children together, or that they present themselves in public as a couple.

    Common-law partners who are unable to live together or appear in public together because of legal restrictions in their home country may still qualify and should be included on the application.
