I am extending the tourist visa for my spouse so she can stay with me until she receives her residency card.
I would like to know if it would be valid to send a copy of a receipt from an investment I made as proof of stability and income?

If you have applied for the PR, and she was already still in status, if she is from a visa exempt country and ye submitted the papers before 6 months, you are on "implied status", so no need

She is from Ecuador and we applied via "Outland" and her tourist visa expires in October so we have to apply by September.
I am going to send a copy of the residency fee paid receipt, a letter from my employer, a copy of our joint Canadian bank/credit card account, a copy of my Sponsorship approval letter. I am wondering if I should send a copy of a receipt from an investment I made as a extra proof besides the proofs I mentioned above?

It will not harm your application to send more proof.

you can start the process whille she is in Canada have you looked at the LICO requirements that you have to meet since this is a parental sponsorship

Parental sponsorship timing - 46 months plus specific country time.

http://www.cic.gc.ca/english/information/times/perm/fc-parents.asp

Taking an example, Manila - Philippines   34 months = Total 80 months (over 6.6 years).
